Molho Chimichurri Sauce

Primeira vez que provei foi num resto de carnes em NYC, colocado sobre uma fraldinha deliciosa. Aí, fiquei encantada e querendo saber como se faz.

E hoje no Tweeter, recebi o link do Blog da Chef Cris Leite que ensina como fazer/

The first time I tasted this sauce was in a steakhouse in NYC, with a delicious flank. Then, I was delighted and wondering how to make it.

And today at Tweeter, I received a link to the Blog of Chef Cris Leite that teaches how to make it.

So...here is just translation:

Tips for a good Chimichurri Sauce:

Do not use olive oil to make the sauce. A neutral oil such as sunflower are best suited for not interfering with the flavor of the herbs.

If the sauce will be consumed in a day or two, you can incorporate fresh ingredients in the recipe; otherwise, you must use dried ingredients.

Use good quality vinegar (always wine, not apple). Replacing a part of the wine vinegar for balsamic vinegar, gives a stronger flavor.

To make the finest chimichurri sauce, add chopped sun dried tomatoes.

Herbs such as coriander and basil are not traditional, but appear in some recipes. Because they are herbs with strong flavor, use a small amount.

Chimichurri Sauce

  • 30g Chopped and fried garlic
  • 80g Chopped and fried onion
  • 60g Red bell pepper chopped
  • 60g Yellow pepper chopped
  • 20g Dried oregano
  • 20g Dried rosemary
  • 1 / 2 bunch Fresh parsley
  • 10g Chilli pepper
  • 5g white Pepper
  • 2 chopped bay leaves
  • 20g Curry powder
  • 20g Sugar
  • 200ml White wine vinegar
  • 400ml Sunflower oil
  • 5g Sal
  • 60ml Warm water
  • 300ml Sunflower oil just to fry the onions and garlic

    How to prepare:

    1. Fry the chopped garlic in sunflower oil, drain the fat in a paper towel.
    2. Repeat the same wih the onions.
    3. FMix with onions, the garlic, peppers, parsley, oregano, curry, rosemary, peppers, bay leaf, sugar, salt, water, oil and vinegar.
    4. Serve with meat.

Camarão na Moranga - Pumpkin with Shrimp



Essa receita é minha companheira! Fácil, fácil, fica muito bom e é ótima pra receber oc convidados.

Ingredientes:



  • 1 moranga média

  • 1 kg de camarão (pode misturar os tamanhos, pois os pequenos são sempre mais saborosos)

  • 2 cebolas

  • 4 dentes de alho picados

  • 4-5 tomates picados

  • Cheiro verde

  • Um pouco de coentro, se gostar

  • *1 pote grande de queijo Catupiry, pode ser requijão ou, em último caso, cream cheese

  • 1 lata de leite de coco

  • Gordura de coco, se não tiver pode utilizar azeite. Você pode usar também o azeite de dendé

  • Sal e pimenta a gosto
    * OBS: Há muito tempo atrás, minha cunhada me deu uma receita de requeijão caseiro...que eu perdi! Mas fiz uma busca na internet e achei uma receita que você pode conferir e testar, clicando aqui.

Preparo:


Comece preparando a abóbora. Corte uma tampa na parte superior, não muito pequena. Coloque a abóbora no micro ondas para amolecer para que possa tirar a polpa. Deixe no micro-ondas por uns 20 minutos. Retire e veja se já consegue escavar!Retire a polpa da abóbora com uma colher.Em uma panela, aqueça a gordura de coco, refogue a cebola e o alho. Junte o tomate, refogue e junte o camarão. Refogue um pouco mais e coloque o leite de coco. Depois coloque o restante dos temperos e deixe evaporar um pouco o líquido.
Bezunte a parte de dentro da abóbora com o requijão. Despeje a mistura de camarão dentro da abóbora e depois coloque colheradas de requeijão por cima. Seja generoso! Leve ao forno en temperatura média-alta, até ferver e derreter o queijo.



Nas fotos, fiz o prato com minha vizinha Monica que ia receber convidados em sua casa. Fizemos uma inovação: além do camarão, colocamos também pedaços de tilápia. Não provei mas, segundo a Monica, ficou ótimo também. Bom Jantar!!

This is easy, easy, it is very good and it is great when you have guests for dinner.

Ingredients:

1 medium pumpkin

1kg of shrimp (you can use the big and the little ones, because the small ones are always more flavorful)

2 onions

4 cloves garlic, minced

4-5 chopped tomatoes

Parsley

A little cilantro if you like

* 1 large pot of cheese cream cheese, can be requijão or, ultimately, cream cheese

1 can of coconut milk

Coconut oil, or you can use extra-virgin olive oil. You can also use palm oil

Salt and pepper to taste


* Note: A long time ago, my sister-in-law gave me a recipe for homemade requeijão cheese, a type of Brazilian cream cheese ... I lost! But I did a search on the internet and found a recipe that I promisse to translate soon

Prep:

Start with the pumpkin. Cut a lid on top, not too small. Place the pumpkin in the microwave to soften so you can remove the pulp. Leave in microwave for about 20 minutes. Remove and see if you can dig now!

Remove the pulp of the pumpkin with a spoon.

In a saucepan, heat the coconut oil, saute the onions and the garlic. Add the tomatoes, saute and add the shrimp. Saute a little bit more and put the coconut milk. Then add the rest of the spices and let the liquidi evaporate.

Bezunte the inside of the pumpkin with the requijão. Pour the shrimp mixture inside the pumpkin and then put spoons of the cheese on top. Be generous! Bake in medium-high temperature, to boil and melt the cheese.

In the photos, I made the dish with my neighbor Monica who was receiving guests that day. We have an innovation: in addition to the shrimp, we also put pieces of tilapia. It didn't tasted but, according to Monica, it was great too. Good Dinner!

Capelletti In Brodo

Se você quer convidar alguém pra jantar e impressionar sem ter trabalho, esse é o prato certo. E se você não possui muitos talentos culinários ou pouca experiência na cozinha também é uma boa dica. Basta comprar produtos e boa qualidade e voilá!

Ingredientes:

  • Caldo de carne ou de frango, mais ou menos 1 litro
  • 500g de capelletti de carne - massa fresca e de boa qualidade
  • 1 cálice de cherez ou vinho do Porto
  • Cebolina para decorar

Preparo:

Vamos começar pelo caldo: o ideal é o caldo caseiro, pois o sabor é muito melhor, sem falar da qualidade é claro. E segue um link aqui da Pat Feldman, que ensina direitinho a fazer os caldos. Mas se você gosta de mais praticidade e mora em São Paulo, a própria Pat vende os caldos caseiros que ela mesma prepara (veja em http://pat.feldman.com.br/?page_id=851). Eu aqui em Montreal compro caldos prontos orgânicos. São excelentes!

Então, numa panela grande, coloque o caldo pra ferver, adicione um pouco de água caso esteja muito forte. Assim que ferver, junte a massa e o vinho. Siga as instruções de cozimento do capelletti e desligue no tempo recomendado. Veja se está bom de sal e adicione a cebolinha.

Picadinho na Cerveja

Sabe aqueles dias que você abre a geladeira, não tem muita coisa pois você acaba de voltar de viagem e falta todos aqueles temperinhos legais??

Pois é, ontem foi um dia desses. Mas sempre tem uma salvação. E a minha estava justamente na geladeira! Abri o freezer e tinha uma carne picadinha que geralmente uso pra fondue ou strogonoff. Mas desta vez, resolvi inventar e coloquei cerveja.

Ingredientes:

  • 1/2 kg de carne picadinha, pode ser patinho, coxão mole
  • 1 cebola grande picada
  • 1 dente de alho bem grande picado
  • Azeite
  • Salsinha
  • Páprica
  • Sal e pimenta a gosto
  • 1 cerveja (usei cerveja normal, mas pode usar da escura também)
  • 1 cenoura pequena ralada
  • 1 tomate grande cortado em 4

Preparo:

Aqueça uma panela com o azeite e coloque a carne para refogar em fogo alto, até que evapore bem o líquido. Junte a cebola e o alho e deixe dourar. Tempere com o sal, a pimenta, a páprica. Quando estiver douradinha, pegando no fundo da panela, junte a cenoura ralada e o tomate. Logo em seguida, junte a cerveja. Baixe bem o fogo no mínimo e tampe a panela. Deixe cozinhar por 30 minutos. Cuidado pra não deixar o líquido secar. Coloque a salsinha no final.

Tá pronto!
